Just A Little History
Bije’s was opened in April of 1996. With a secret pizza recipe from Lucca, Italy and a commitment to offering the best pizza in Chicago, it is no wonder that Bije’s is such a popular neighborhood restaurant. Owner Carl Quilici has a natural knack to make everyone feel at home at Bije’s by sharing a joke at the bar or tossing pizza dough high in the air to impress the kids.

Carl was born in Chicago, and raised in a family with a long tradition in the restaurant business. His family has owned and operated Roman Holiday, Armando’s, Armando Q’s and the Original Gino’s East. The biggest influence in Carl’s life was his father, who instilled a love of the kitchen and the importance of providing customers with great food. Carl and his wife, Liz, opened Bije’s almost 2 decades ago on April 1, 1996. April Fools’ Day? Yes, because according to Carl, “Only a fool goes into the restaurant business”.

The success of Bije’s is a direct reflection of Carl’s own philosophy: Only use the freshest ingredients available, never compromising quality for quantity, speed or price. Carl proudly states, “At Bije’s, I will always bend over backwards to offer the best in quality, value, and service. Come in and see what you are missing!”

I had always been in the family business, but this time it was different, I decided to venture out on my own. With all of the competition I was a little wary of opening up a restaurant, but my father told me the secret of success: “When you give the customers the best food and the freshest ingredients, they will keep coming back.

I would like to thank each and every one of you for your continued support and friendship throughout the years. I feel as though we have grown together through the last sixteen years. You have seen me start my family, and have watched my children grow. I can’t tell you how many of your children I have taken in the kitchen and had them make their own pizzas, and now I see them and they have grown into young adults. Some are a foot taller then me; others are going off to college or having little ones of their own. And the parents haven’t changed at all, well maybe a little more grey hair or perhaps a little less hair!

You will often hear that Bije’s has the best pizza in town. Come on down and visit us, don’t expect anything fancy, just good service, friendly faces and of course the best pizza around. Thank you for letting my family join in your family’s festivities. We have had your birthday, christening, shower, wedding and retirement parties – now we are looking forward to the next generation of parties and serving you the best pizza in town for many more years!
